QUICHE, TARTE OR WÄHE - THE QUALITY OF CHOICE The Wähe is a flat cake originating from south-west Germany or Switzerland, with a base of fine shortcrust pastry and a delicious topping of fruit, vegetables or cheese. In some places, it is also baked with a yeast dough base or puff pastry. West of the Rhine, it is often referred to as a quiche or tart. South of the Alps, savoury yeast dough flatbreads topped with tomato sauce, mozzarella and other tasty ingredients and baked in a wähen shape may also have been spotted.
