- -SUMINAGASHI - NANBU GYUTO
- -A truly unique piece. The blacksmith, Toshiki Nanbu, uses an innovative V2 steel for this knife, which is compared to the blue Yasugi steel. It enables Nanbu-san to forge the steel according to its advantages in detail and still achieve a hardness of 65HRC. This allows the blade to be ground thin and sharp like a scalpel. The 180mm blade length of the Gyuto Knife enables a very wide range of applications for vegetables, meat and fish. The Suminagashi Nanbu-Gyuto is a connoisseur's knife. Nanbu-san is the last blacksmith in the Echizen region who works entirely according to traditional blacksmithing processes.
- The V2 Special Steel blade can rust as the material is made of carbon steel. After use, make sure to wipe the dirt off the entire knife with water and dry it thoroughly with a cloth.
- You can then rub the blade with a maintenance oil to care for the blade and enjoy it for a long time.
- The knife has a very sharp cutting edge. Please use a cutting board made of natural wood such as bamboo, cherry or oak.
- -Made in Japan
Notes
- The knives have a very sharp blade. There is a risk of injury if you touch the blade with your fingers.
- Do not hold it in a fire (heat it up). This will impair the hardness of the knife blade and render it unusable.
- Please keep the knife out of the reach of children.
- The handle is made of natural wood. Avoid prolonged soaking in water to prevent the handle from softening.
- Before using the knife, check the handle for tightness. If anything is loose, please do not use it.
Care
- Do not wash in the dishwasher. This can damage the knife.
- Over time, the sharpness of this type of knife can diminish if it is used frequently. We recommend restoring the blade using a suitable sharpening stone.
Material
- -Main material: Damask steel
