How To
Prepare mushrooms
Wild mushrooms grow directly from the forest floor. Soil crumbs and pine needles are therefore often unwelcome companions - and not just when we collect them ourselves. They are also often found when you buy them in the shop. We have to clean the mushrooms carefully so that they don't crunch between our teeth when we eat them. And please don't wash them! That is a "no go". Mushrooms are almost 100% water, and we don't want to add any more. So we are left with a slightly moistened piece of kitchen paper, a brush or a small knife to remove unnecessary ballast from the delicate treasures of the forest.
