How To
Grilling a steak to perfection
Grilling a steak properly is basically very simple, you just need to know how. Here we grill a dry-aged steak on the bone weighing around 1 kilo.
With these steps to the perfect steak
Allow the meat to reach room temperature.
Prepare the embers. Place the grill about 10 cm above the embers.
Pull the steak over the grill grate a few times so that the fat from the meat 'lubricates' the grate.
Place the meat on the grill and season immediately with coarse sea salt.
Do not touch for 1 minute, then turn by 60 degrees. If necessary, adjust the height of the grill if the dripping fat causes the flames to flicker. The flames should only just touch the steak.
Repeat the turning by 60 degrees five times and continue grilling for one minute after each turning. The meat should take on a mahogany-brown colour.
Turn the steak over and salt the other side immediately.
Repeat steps 5 + 6.
Leave the meat to rest in the oven at 60° C or alternatively on the edge of the grill for 15 minutes.
Cut the meat from the bone and carve into 5mm thick slices. Drizzle with the best olive oil and sprinkle with Maldon salt flakes.
