Hasselback Potatoes

Hasselback potatoes are probably the most impressive potato side dish I know. Sliced like a fan, they are not only a feast for the eyes, they also taste fantastic thanks to this cutting technique. The edges are as crispy as perfect chips and the centre is as soft and creamy as a good mashed potato. This method of preparation is currently experiencing a hype on the internet, even though Hasselback potatoes have been around since the 1950s. The Swedish chef Leif Elisson, who at the time was at the cooker in the Hasselbacken restaurant in Stockholm, invented this sophisticated version of the baked potato.
