How To

Open oysters

"You should only open an oyster when it is completely clean and dry. To do this, place it on a work surface with the bulbous side down and hold it firmly with one hand. You can also place it on the palm of your hand to open it. Then run the oyster knife between the shells on the side or back and prise the shell halves apart. As soon as the oysters open slightly, you can push the top shell away completely by hand or with the knife. Make sure that the liquid in the lower shell does not flow out. Remove any splinters of shell with the tip of the knife. The delicious crustacean with its fresh sea flavour is now ready to enjoy. Before eating, separate the oyster body from the sphincter at the bottom with a knife or fork. Tip: A chain glove protects against injury when handling the knife and oysters."
