How To
Wakame butter
"Keeping the starter simple is always a good idea, especially if you're serving a feast. Crunchy radishes with a nice garnish are something special. Wakame butter. That's all it takes to delight guests. Wakame is a type of seaweed, also known as Japanese seaweed, which thrives on the coasts. Its natural saltiness gives the butter a lovely flavour and the seaweed, together with the matcha powder, a beautiful deep green colour.
You can easily make your own wakame butter. You will need: 60 g wakame seaweed, dried 10 g matcha powder 250 g butter, room temperature ½ lemon, juice
Firstly, mix the wakame seaweed in a blender to a fine powder and then sieve it to make it super fine. Blend the residue again and mix the now almost powdery seaweed with the equally fine matcha powder. Mix this powder mixture with the butter at room temperature to form a homogeneous mass. The wakame butter will stay fresh in the fridge for a good week. It also tastes wonderful with good, fresh bread, but also with seafood and rice."
