- -Pepper RDX (reduction) is a rich and delicately aromatic reduction made with ground Madagascan pepper. Experience has shown that just a drop or a splash is enough to enhance almost any dish. This sauce, which has been a staple on Noma’s menus for almost a decade, is ideal for stirring into pan sauces, brushing onto grilled seafood and vegetables, or whisking into your favourite butter. Start with peas, finish with pepper. For Pepper RDX, peas are puréed with water in the Noma style, frozen and then clarified with ice until a clear liquid is produced, which is then reduced to a syrup. This syrup is refined with ground, aromatic Madagascan pepper, which adds notes of nutmeg, cumin, allspice and Szechuan chilli. It is more fragrant and mild than hot. Shake well for the perfect finish. Pepper RDX is a seasoning sauce that is ideal for brushing onto grilled seafood, drizzling over barbecued vegetables or stirring into your favourite butter for added flavour. Direct heat should be avoided, and the sauce should be shaken well before use.
