How To
Make your own herb butter
"Herb butter accompanies us through life, so to speak. We come across it again and again, whether we're shopping or in a restaurant. But there is only one form that makes us completely happy: the one we make ourselves in our own kitchen from a few good, fresh ingredients. Take 250g of very soft butter, 60-80g of fresh chopped herbs, some crushed garlic and mix everything well with a fork. Now flavour the mixture to your taste. Add a little cayenne pepper, allspice d'Espelette or whatever you like. Finally, flavour your herb butter creation with salt, ground black pepper and a little olive oil. Place the freshly made herb butter mixture on a piece of baking paper and roll everything up like a sweet. Feel free to make a larger quantity for stock. Herb butter can be frozen for a long time and stays fresh in the fridge for a long time. The roll shape makes it extremely easy to cut, even when frozen."
