How To
No knead pizza dough
Ingredients for 3-4 pizzas
500 g pizza flour 00 or white flour
½ tsp active dry yeast
1-2 tsp salt
370 ml lukewarm water
Preparation
Mix the flour, salt and yeast together well in a bowl. Slowly add the water and stir everything with a wooden spoon until the flour has absorbed all the water and a sticky dough is formed. You can also mix the ingredients with your hands, but please do NOT knead the dough. Now form it into a large ball and place it in a clean bowl. Cover it well with baking paper or a cloth and leave the dough to rise at room temperature in a draught-free place until it has doubled in volume. Depending on how warm it is in the kitchen, this can take up to 18 hours. On a particularly warm day, I have also left it to rise for just 5 hours, as the dough is totally uncomplicated. To prepare the pizzas, divide the dough into 3-4 pieces, which you press apart slightly on 4 sides with your hands on a floured work surface. Then fold the corners over each other, turn the dough over, shape into small balls, cover and leave to rise for 1 hour. The dough should be soft and elastic. It is easy to prepare and will stay fresh in the fridge for up to 3 days if wrapped in cling film."
