Fillet oranges

The segments of citrus fruit are covered in a whitish skin that tastes bitter. But if you cut it away, the result is pure luxury! This brings out the pure, unadulterated flavour of oranges or grapefruit much better. It takes a bit of work, but filleting is not difficult with a little practice and is definitely worth it. To do this, cut off the top and bottom of the fruit so that the flesh is already visible. Then use the same knife to remove the peel generously so that no white skin remains. Hold the peeled oranges over a bowl and cut out the segments between the separating skins. The juice that comes out is collected by the bowl. Squeeze the remaining juice from the filleted orange.
