The production of grappa begins with the pomace, which is the name given to the pressed grapes in the wine-making process. Grappa comes exclusively from Italy and Ticino, where Berta, Marolo, Poli, Nonino and Sibona are important producers. The provinces of northern Italy that are relevant for this purpose are Friuli, Piedmont and Tuscany..
Grappa is colourless and transparent, but the ageing process in the barrel gives the grappa a honey-yellow to amber colour, which also defines the taste. The highest quality grappas are made from the pomace of red grapes. At Globus you will find grappas from the Super Tuscans Ornellaia, Tignanello, Sassicaia and others such as Grappa Nebbiolo or Grappa Amarone.
